mindful menu – week of 3.28.2010

I have been sick and miserable but did manage (with the help of my awesome friend, Mara) to get my bloghome all spruced up! Do you like??

On the menu this week:

Sunday: Beef Stew & a salad

Monday:  Pork Tinga with Potatoes, Avocado & cheese. I found this recipe today while I watching a Rick Bayless cooking show on NJN

Tuesday: Soup & Sandwiches ~ Big Man is going to make his awesome ham & bean soup!

Wednesday: Cheesesteaks, oven fries and a slaw/salad (I  have been addicted to this ww recipe )

Thursday:  I will heat up the crab & spinach lasagne is already made and in the freezer. Add some grilled chicken to some romaine and we have a salad.

Friday: Kid’s Night!! The kid has requested Hot Dog Casserole ~ hotdogs and baked beans baked in the oven! I will add a big salad to my plate ~ lame-o mom doesn’t really like hot dogs but I love my kid!

*I have been re-working my thoughts on food and weight loss and dieting. I am finally not on a diet! I em enjoying food again. I am working on adding extra veggies in every meal.  My food hasn’t really changed, only been enhanced. I am eating more of the “good stuff” and less food overall. I am thinking about food less often and that is a good thing. I still think about food but not is a weird obsessive way. I know what foods are good for me and I know what foods are bad for me…I mean seriously, does anyone think fried chicken is good for them?!?! But knowing ad doing are two completely different things!

I am finally getting to the doing part! But I am not perfect! So cheesesteaks and hot dogs still find their way into our dinners! But we don’t order out because those cheesesteaks are too greasy and I make a much better cheesesteak!

I am back to menu planning after taking a few weeks off! I still planned (sort of) but did not blog my menu! Food was giving me anxiety and I needed to figure out why! I think I finally have a grasp on it!

    So many things I could say about this! But I'll just stick with…1. Like the outdoorsy feel of your new look! It's like a breath of fresh air (except it doesn't make me sneeze! ;)2. Rick Bayless makes some really yummy (looking) stuff! I catch him on PBS once in awhile. Thanks for linking to that recipe – think my Hubs would looove it!3. I'm glad you're able to work towards a more healthy view of food. That's hard for me, and hard to do in our culture in general! We're so weird about food and eating!4. And, yeah, you can sweat about the details, but the basics of “good for you” food are pretty simple (lots of fruits and veggies, whole grains, lean protein, etc.) A little bit of the bad stuff isn't gonna kill ya either. (At least, I hope not! We worked on taxes last night until I was too tired too cook, and we ordered pizza. It was not a healthy choice.
